Oatmeal-Coconut-Super Seed Breakfast Cookies


Super Satisfying and Nutrient Supporting Snacks 

Rich in:

  • · Quality amino acids
  • · Healthy essential fatty acids,

  • · Fibre and fabulous flavours…

Maple syrup is a wonderful commodity of Canada and a fabulous choice when looking for a sweet.  This super simple, fast and fabulous recipe makes for a company worthy yummy treat.  You may want to double the recipe.

Nutty Nuggets Makes approx. 12 – 14 Oven 325 - 350F

4 cups nuts – almonds, pecans, walnuts, cashews, etc…

½ cup sesame seeds

1/3 cup maple syrup

2 tbsp Tamari, Bragg’s All Purpose or Soy Sauce

¼ - ½ tsp sea salt, optional

½ - ¾ tsp each cinnamon, cardamom, ginger

¼ - ¾ tsp cayenne or crushed Chilli peppers, to taste

1. Cover a baking pan with sides, with a layer of parchment paper and pour in the nuts.  Drizzle the maple syrup and seasonings over the nuts.  Stir well to coat and spread out in a thin layer.

2.  Place the baking pan into the oven and let bake 15 – 20 minutes stirring occasionally.

3.  When done, stir the nuts again. Drop spoonfuls onto a parchment covered cookie sheet or simply let cool and break into small sections.  Makes for a fast and fabulous snack.

Ruth’s Chia Coated Fresh Fruit Fondue

Chia provides more calcium than milk, more Omega 3’s than flax (4gr), is rich in dietary enzymes and delivers 5 grams of fibre in 2 tbsp.

Pour your chosen Chia cereal into a bowl and serve with bite size pieces of bananas, apples, pears etc for dipping… Alternatively you can pour the Chia cereal into a zip log baggie, toss in the fruit cubes, shake and serve or save for a snack later.  The fruit will stay fresh (even over-night) and taste fabulous when you indulge.  Adding cinnamon makes it even more nourishing and tasty.

Ruth’s Chia Pear Pizza

Slice pears or apples, dab moisture with a paper towel, spread with sunflower or almond butter and sprinkle with your favorite Chia cereal.  Perfect right away or pack and enjoy later as an ideal breakfast on the go or snack.

For an even faster treat - sprinkle fruit with ground flax and cinnamon and or Chia seeds or cereal.

Teri’s Stuffed Dates

Mid Eastern Boxed or Medjool Dates

Nut or Seed butter,

Raw walnuts, almonds or pecans

Dark Chocolate

Seasonings and Spices such as: cinnamon, ground cardamom, ground coffee beans, cayenne pistachios, etc…

1. Pit the dates, spoon in a little nut or seed butter, a little piece of chocolate and or nut of your choice and gently press together.

2. Sprinkle with chosen spices, finely chopped pistachios or ground coffee and enjoy.

These can be made ahead and frozen. The nut and nut or seed butter combo makes this a perfect fast food snack that is even better that a store bought power bar. The quality protein and essential fatty acids along with the cinnamon makes for a slower and sustained energy release keeping you satisfied longer.
